RECIPES

Cooking healthy foods with your children is a wonderful way to spend quality family time. Below are some ideas for fun and easy recipes for the family. You will also find links to many more recipes that your family will enjoy.

     

Peanut Butter Muffins

Prep time: 35 min

Ingredients: 2 eggs, 1 c. milk, 1/4 c. banana (about 1 banana, mashed with a fork), 1/4 c. peanut butter, 1/3 c. vegetable oil, 1/4 c. frozen apple juice concentrate, thawed until it's soft, 1/4 c. nonfat dry milk, 2 1/4 c. flour, 1 1/2 tsp. baking powder, 1 tsp. baking soda, nonstick spray

Directions:

1. Preheat oven to 350 degrees

2. In a small bowl, break the eggs and use a fork to beat them

3. In a large bowl, combine the milk, mashed banana, peanut butter, vegetable oil, apple juice, dry milk and the eggs from the other bowl. Mix until creamy.

4. Add the flour, baking powder, and baking soda into the large bowl and mix again.

5. Use muffin cups or nonstick spray to muffin tin. Spoon in the batter filling each cup up 2/3 of the way.

6. Bake for 15 min.

7. Remove muffins from the tin and let them cool.

 

Whole Wheat Pita Pizzas

Ingedients: whole wheat pita bread, marinara sauce, your choice of fresh vegetables, lowfat mozzerella cheese

Assemble pizza to your taste

Bake at 350 degrees until the cheese is melted

 

Chicken Roma

Only 176 calories and 4 grams of fat, 25 grams of protein per serving

Ingredients: 8 pieces of chicken, 1/4 tsp of salt and pepper, 2 medium zucchini in 1/4" chunks (4 cups), 2 cups of mushroom halves, 1 can tomatoes, 1 chopped yellow onion, 3 cloves garlic, 2 tsp dried basil, 1 bay leaf

Directions:

1. Preheat oven to 425 degrees

2. Rub chicken with salt and pepper

3. Place in 13x9 roaster

4. Combine remaining ingredients in bowl and spoon over chicken

5. Cover with foil and bake 35-40 min.

SNACKS

Strawberry & Banana Smoothie

2 bananas sliced

1 cup of fresh strawberries sliced

1/2 c. 100% juice (apple juice)

3 tbs. non-fat yogurt

Put in a blender and mix together

 

Make your own Totilla Chips

4 Whole wheat tortilla

olive oil

your choice of seasonings; garlic powder, chili powder, cheese, lime juice etc.

Spread a thin layer of olive oil on the tortilla

Season to taste

Cut totilla into triangles

Spread the triangles on a cookie sheet

Bake at 400 degrees for 8-10 min or until crisp

Dip in salsa if desired

Trail Mix

Create your own family trail mix using ingredients that are liked by all members of the family. Make sure the healthy ingredients out number the not so helathy ingredients.
